Hi,
I use Imovie, there's nothing easier and more intuitive for a mac in the price range.
Here's what I use for my video:
Compression: MPEG - 4 (the standard "video" setting)
Quality: medium
Frame Rate: 12
Key Frame: 36
Bit Rate: 800 kbits/sec
Size: 480x360 - you can use any size you need. This comes out to about 6 mb per minute.
Sound:
Format: Apple Lossless
Sample rate: 8.000 khz
Channels: mono
It took me a very long time to find just the right combination. I don't do streaming. It takes many times longer to do it and not worth it on big files anyway. I wasn't satisfied with the "cd" setting so this works best for me. Maybe you can use it as a place to start and make it work for you.
Hope this helps.
