Does anyone know if it is possible to set 'permissions' for certain file extensions in XP so that if copying a folder, specific file types, for example .jpgs can automatically be NOT copied but the rest of the folders contents will be?

Tugh one.... Using Novel Netware I could show you how to do it, Linix would be doable, too, but Windows XP - I just checked if I can find how to change the owner of a file.... can't find it :-(
As far as I know, you can make a file read-only to prevent deletion or modification, but I don't think you can make it nonreadable as you could in Linux.
You can make a *directory* readable by only certain users but I think that's the extent of it, as far as I know.
A "workaround-style" way to do this file by file is:
1. Open the file.
2. Sort the documents in the file by file type.
3. Then, use a left-click drag to bulk select the files you want. Hold the shift key down when you want to add or delete any selection from the bulk selection.
