of course there's a village here called Ypres... pronounced 'wipers'
Chicken Cacciatore
From Mamma DeAngelo's Kitchen
Assorted chicken pieces (any combo or whole cut up is fine)
Olive oil
Bell Pepper (green) chopped
1 Bell Pepper (red) chopped
1 onion chopped
1 large can of whole, peeled tomatoes (fresh are always better)
salt and pepper to taste
Italian seasonings
Pour some olive oil in large pot and warm over medium heat
Add onion, green and red bell peppers and sauté for about 5 minutes
Move the vegetables to one side of the pot and add chicken pieces
Lightly cook chicken on all sides but do not cook
Add canned tomatoes, seasonings to taste, stir and partially cover
Cook at a very low simmer for an hour or so, stirring every so often
Serve with noodles, or whatever you like
