    Stuffed Red Bellpeppers Batman!!

    THIS RECIPE FOR STUFFED RED PEPPERS IS ABSOLUTELY AWESOME AND REALLY EASY TO MAKE, JUST THOUGHT I"D PASS IT ALONG.

    OK THIS SERVES 4 (but only 2 if you're a pig like me)

    This is absolutely delicious. The red peppers give a wonderful sweetness to the dish, quite different than stuffed green peppers. If you prefer a lighter version, cut down or omit the ground beef and add more of the vegetables.

    INGREDIENTS

    4 medium, thick-fleshed red bell peppers
    2 cups cooked rice (I like a mixture of white and brown)
    2 tablespoons olive oil
    1 pound lean ground beef
    1 teaspoon fennel seed
    1/4 teaspoon rubbed sage
    1/4 teaspoon dried thyme
    Salt and pepper to taste
    1 small onion, chopped
    1/2 green pepper, chopped
    1 small red pepper, chopped
    4 large cloves garlic, minced
    1 large tomato, chopped
    2 small zucchini or yellow squash, chopped
    4 ounces mushrooms, chopped
    1 tablespoon dried oregano
    2 tablespoons freshly grated Parmesan cheese
    2 ounces mozzarella, goat or ricotta salata cheese, crumbled
    Cut the red peppers in half lengthwise. Discard seeds and stem. Place in one layer in a microwave-safe dish. Cover with plastic wrap. Microwave on high until tender, about 2 to 3 minutes.

    Meanwhile, heat a large skillet over medium-high heat. Add the olive oil. Sauté the ground beef until browned, stirring in the fennel seeds, sage, thyme, salt and pepper when it first starts to cooking. Remove and drain if too greasy. Remove all but 2 tablespoons of the oil from the pan. Add the onions and chopped peppers to the pan; sauté until softened, about 4 minutes. Then add the garlic, tomatoes, zucchini, mushrooms, oregano and a bit more salt add pepper. Sauté until all is tender, about 10 minutes. Remove from pan.

    Preheat oven to 350° F. Place the peppers in one layer in a baking dish. In a large bowl, mix together the ground beef, vegetables and rice. Add the cheeses and stir well. Taste for seasoning. Stuff each pepper half with the mixture. Bake, covered, until hot and bubbly, about 30 minutes. Increase heat to 400°. Remove cover and bake until lightly browned on top, about 10 minutes.

    Nice recipe, especially if one uses ricotta (of course you've gotta know you have tah!)

    I do (cook), all the time - if anything, I spent too much time in the kitchen!
    For example, just last night I was cookin'-up some rock :goof:

    I spend a lot of time in the kitchen preparing meals, because I simply love it (preparing, cooking etc) and find it to be one of the most tranquil daily duties (includes washing dishes/cleaning-up).
    I rarely (more like never) do instant or precooked/prepared foods.

    Last eve was Punjabi Chotney (not chutney) with coconut cream rice, bitter greens dressed with fresh roasted red pepper paste and pineapple sorbet.

    Okay, now I am hungry, again.

    Sure enjoy

    A Simple Pineapple Upside-Down Cake that will leave ya feeling very proud!
    You will need:
    1/4 cup butter (unsalted prefferably)
    1 cup firmly packed brown sugar
    8 maraschino cherries
    20-ounce can of pineapple slices, drained, keep at least 5 tablespoons juice
    3 eggs, separated
    1 cup white sugar (yep, there's alot of sugar going on!)
    1 cup all-purpose flour
    1 teaspoon baking powder
    1/2 teaspoon salt (leave out if using salted butter)

    Preheat oven to 350°F.
    Melt the butter in a 9-inch cast iron skillet. Add the brown sugar & stir well to thoroughly combine, then turn off the heat -- don't cook it. Arrange 8 pineapple slices in a single layer over the brown sugar mixture and drop the cherries into the holes of the pineapple slices (your 9-inch skillet should accommodate 8 slices without overlapping). Set the skillet aside.

    Combine the flour, baking powder (and salt) in a bowl; set aside.

    Beat the egg yolks at medium speed until they are thick and lemon colored. Gradually add the white sugar, continuing to beat. Add the flour mixture to the yolk mixture, and stir in the reserved 5 tablespoons of pineapple juice.

    Beat the egg whites until stiff peaks form. Fold the whites into the cake batter. Pour or spoon the batter evenly over the pineapple slices.

    Bake at 350°F for 40 to 45 minutes. Cool the cake in the skillet for 30 minutes; then invert it onto a serving plate.

    A little brandy can be 'spritzed' over the top for the alcoholics amoung us if desired.

    Well, since we're sharing recipes, I'll give you one of mine. It's easy as hell to make, and people go ga-ga over it. Trust me, this dish is not for those who are on a carb-conscious diet, but they will LOVE you at family picnics and barbecues if you bring this:

    KEN'S BISCUIT & BAKED BEAN CASSEROLE

    3 half-sized cans of Bush's baked beans
    1 lb ground hamburger (or meat substitute of your choice)
    1/2 medium sized red onion
    1/2 red pepper
    1/2 green pepper
    1 cup barbecue sauce (hickory brown sugar is best)
    1/2 cup shredded cheese of your choice
    1/4 teaspoon chili powder
    2 containers Pillsbury Flaky Gold biscuits

    Sautee hamburger, onion and peppers and chili powder (I use olive oil; sometimes I add a bit of nutmeg or cinammon), then mix into casserole dish along with baked beans. Add barbecue sauce and stir.

    Arrange biscuits on top as a "crust," then sprinkle with cheddar cheese to desired amount and bake at 410 until biscuits are golden brown on top.

    I just made this again this past weekend. People just LOVE it.
