the simple way is to just make a form and have it submit mailto: your email address. Then just add the email to a list on your hd or in your mail client.

PHPList.com has an amazing free script that collects the info, manages the list, and allows users to add and remove themselves without any intervention from yo.

We've used it for a bit over two years and it works great.
