What Do You Cook / Eat On Christmas Eve?

We're having a handfull of friends over this Christmas Eve for a few hours and to be honest, we're kind of stuck about what to have in terms of the food, we're pretty much set on the fact it isnt going to be a 'sit down' meal but other than assorted cheeses and fruit, some pierogi and shrimp we're at a loss for what to serve.

Do you folks normally cook / eat anything special on Christmas Eve that could give us some ideas?

    Regards,

    Lee

Hit the appetizers/finger foods section of your grocerers freezer:
    wingdings
    mini egg rolls
    mozarella sticks
    jalepeno bites
    mini quiches
garlic toast / vegetables / cheese fondue
    stuffed mushroom caps

Generally, we order pizza because we're cooking for the next day... And of course snack-like pickings from whatever it is that we're cooking. :joker:

Our Tradition is that Christmas is Thanksgiving with Presents... so we do the same thing... Turkey, Ham, Potatoes, Biscuits, Mac and Cheese, Stuffing, Deviled Eggs, Greens, The whole nine. And then about 10 different types of desserts and cookies.

    Meats

Oysters - December is a good month for them (any month with an R in it)
If you don't like them raw, you can steam them, stew them and or make a rockerfeller. - A nice tray with ice and half shells will keep on a table. (around $30 to $40 a bushel)

Shrimp - Boiled, then placed on an ice tray (make a tart and less tart cocktail sauce)

Yakitori Chicken - Maybe make a peanut sauce on the side

    ---

    Sweets

Brie - Backed into a sour bread roll - You can make personal brie rolls in a cupcake pan - serve warm so the cheese is still runny.

Baklava - Make it 6 to 7 days before the party so the honey can set up. (a batch "can" cost up to $40 to make)

Tiramisu - Most people know OF it but have never HAD it. (A party is where most people try new things)

    ---

    For the non meat eaters

Sliced Beefsteak Tomatoes - Offer a virgin olive dressing or, Balsamic Vinegar

Olives - Keep away form the small olives in a can or jar - Get the large,Jumbo black and Green olives from a deli.

Focaccia Maybe bake it with a thin onion crust

    Curry Potatoes

The main thing is to ask yourself - What kind of friends do I have? Bar friends who think it's going to be a dorm party? AND - What do they eat? Will shellfish make someone sick?

King crab legs are king on Christmas eve!

What we always do in Louisiana on Christmas eve is keep it simple, and that means King Crab legs! My dad used to ship us 100 pounds of king crab legs and we ate 'em all up.

You can steam them, but if you have a big crowd, all you have to do is line 'em up on a sheet pan and put them in a (hot) oven for a few minutes.

Serve with lemon-butter. Can't get more simple than that.

We leave the complicated stuff for Christmas day...

We're totally traditional (at least from a Italian Catholic perspective) -- fish ONLY on Xmas eve and almost always goose on Xmas day. Last year, we felt like a change and had Roast Beef, but that was an aberration.

Well so far we have decided on the following....

    Pierogi
    Poached Salmon
Latkes (Potato Pancakes) with Sour Cream and Apple Sauce
    Shrimp
    Lamb Cutlets
    Salad - Probably Ceasar

I think we want to add a couple more things but thats going to be plenty.

    Regards,

    Lee

Why not skip all the work and just order several dishes of food from your fav restaurant(s) and just put it out in pretty serving dishes?
