Say i have a model here right now on webcam jacking off or whatever, how would i go about saving that feed as it happens to re-encode at a later date?

Have you looked at Microsoft Media Encoder? I'm 99% sure you can save while broadcasting with that.

Well its not really being 'broadcasted' per se, basically will just be a guy sat in front of a webcam jacking off, fucking, or whatever, there wont be any direct feed/stream to anywhere else except the PC/Laptop the webcam is connected to.

Im kinda wanting the best quality possible but know nothing about webcams, is it possible to get one that records in raw data or do they all pretty much do mpg or wmv?

It's been over a year since I researched them, but at the time the Logitech QuickCam Pro 5000 looked the best judging color and clarity among sub $100 cams. There was a Creative that had better color, but less clarity.
But in the end it comes down to room lighting and setting the cam manually instead of using the auto settings. If everything is tweaked just right you can actually make the original QuickCam from 10+ years ago look good, but it's not going to be very versatile.
I would be interested to see how the higher end Philips cams look these days. They had one 3-5 years ago that was very clear, but the colors were not the best and it was expensive. http://www.webcam.philips.com/en/hk/Overview.html
