Just when you thought every morsel that could be fried had been tried at the State Fair of Texas – fried Twinkie, fried Coke, fried bacon, oh my – now comes this:
Deep Fried Butter, anyone?
Fried butter is among eight dishes contending for Monday's fifth annual Big Tex Choice Awards, which showcases the top new foods at this year's fair. Fried butter will duke it out with other fine fried foods, including the fried sweet potato, fried peach and fried pork loin.
Deep Fried Butter is the creation of Abel Gonzales Jr., who's received previous Big Tex honors for his Texas Fried Cookie Dough, Fried Coke and Fried Peanut Butter, Jelly and Banana Sandwich.
If there were a Big Tex Fried Food Hall of Fame, Gonzales would be in it.
This year's creation started with a hankering for buttered toast. He wondered how he could incorporate the taste he loved into a State Fair dish.
Scoops of pure butter the size of golf balls are frozen and covered with dough and dropped into the deep fryer. Bite into a ball and melted butter pours out.
This is no health food, but Gonzales says it tastes rich – and good.
"There's nothing better than to have a piece of warm bread with melted butter all over it," Gonzales said. "Who's not going to want that?"
Forty-nine foods were submitted for this year's competition. Fair employees sampled 20 items and then selected the eight finalists, spokeswoman Sue Gooding said.
On Labor Day, three judges will pick two winners: best taste and most creative.
"It's obvious that the concessionaires have spent a lot of time working on their menus," Gooding said. "If it can be fried or if you can put powdered sugar on it, we either have it at the fair or we will have it at the fair."
Gonzales said the annual food event enhances the fair, which starts Sept. 25 and runs through Oct. 18. That's when the new creations will be ready for public consumption.
"For a long time, State Fair food was on cruise control, but now everyone is going after that next big thing," Gonzales said. "You go to the fair just to try the latest crazy thing. It's up to us to make it really good."
"It's that special time of the year where you want something good," Gonzales added. "You work it off for the next few weeks eating salads."
And, yes, Gonzales has thought about serving fried salad at the fair. But there's one problem: getting the lettuce to survive the deep fryer.
Maybe next year.

Next year i expect they will be serving deep-fried lard.
