Tzatziki Recipe

  1. 200 grams / 7 oz of Greek yoghurt
  2. 1 medium sized telegraph cucumber
  3. 1 to 2 cloves of garlic
  4. small bunch of mint or dill
  5. 1 tablespoon of olive oil
  6. juice of 1 lemon
  7. pinch of ground cumin
  8. pinch of ground coriander
  9. salt and pepper to taste


  1. Peel and mince the garlic.
  2. Rinse and finely chop the mint.
  3. Juice the lemon straining out any pips.
  4. Finely chop or grate the cucumber and place in a piece of cheesecloth or a tea towel.
  5. Squeeze the cumcumber in the towel to force out all the moisture.
  6. Place the 'dry' cucumber in a bowl with the Greek yoghurt, minced garlic, chopped mint, olive oil, cumin and coriander.
  7. Mix well to combine and add the lemon juice, salt and pepper to taste. Cover and refrigerate for at least one hour.
  8. Pour into a serving dish and serve with pita bread, ouzo and feta cheese.


Makes approximately 1 cup.
