For shooters like Angelo and other who have been making movies with nude models for 20-30 years - ranging from Arnold-esque non-sexual nudes to the full-out oral/anal scenes - where is the line in the sand about the way things were in the 80s and 90s compared to the paperwork and photocopies required today?

Is it 1993, 1995 or 2000 as the AVN article explicitly says? To now, I've not looked to AVN as a source authority for how to's about this, and it caught me by surprise to read an AVN article with specific legal advice.
