You could probably find a "retro" plugin for photoshop that will mimic Kodachrome or Ektachrome.

Same for video, and there are definitely some gamma filters and noise filters you can use to simulate old 16mm film.

The purists will be able to notice the difference, but I doubt anyone else will.
I'm with Chip. Use technology to your advantage. There is a reason people dont use old cameras anymore.
