How do you pay models: cash or check?

Here's a dumb question: when you pay by check but cash it for them on the spot, do you make the check out to the models name or to "CASH"?

the models name , that way it's proof the model was paid since most checks require signature and model idents on the back of the check.

I pay in cash , reciepts are obtained however.

We pay by check. All models sign a form that we have had made. Every time a model is paid, it is entered unto this form. The model signs his initials to it, signs the bottom of the form. And we do 1099's on each model. Also every time they are paid, they sign a receipt of payment which is in their contract.
