turmeric might be good on those, too.
btw, don't forget eggbeaters or - even better - the albertson's brand egg substitute. they're cholesterol free and they work for omelettes, french toast, cake, battered foods and pretty much anything egg that doesn't require the yolk and the white to be separate. the albertson's one is called "the amazing egg" and i prefer the texture and taste, particularly for baking.
